Albany John’s Chicago, IL dwelling brother and our friend Manhattan Maka went to the Caribbean for a little vacation together in February.
Chicago Velvet Smoove mailed us 3 packets of Caribbean spice blends he picked up – Cruz Bay Grill Rub (for potatoes and meat), Black Voodou Grilling Spice, and Island BBQ. So far we’ve tested out the first two. Tasteeeee!
Here’s the Cruz Bay rub on potatoes. I cut them up like french fries, gently slathered them with seasoning, and they sat in the fridge for a few hours until roasting in the oven for about 30-40 minutes. They were insanely tasty – salty, herby-peppery. Good!
I can’t wait to try this on meat.
Here are some chickpeas roasted in a pan with Black Voodou. Spicy, but a good warm blend that I can tolerate! Albany John also used the Black Voodou when he cooked a brown rice dish – tres bon, srsly.
I can’t wait to get some more meat to try these spices out on. Hello Caribbean chicken!
