Yes, 2 weeks in, and we’re already at the max. Oopsie. But this trout was a very yummy treat. Albany John baked it in the oven, skin side up. Nice and rare in the center, with copious amounts of salt.
I made some potatoes – crispy skinned on the outside, and soft inside. Just cut them up, par-boil for about 7-8 minutes, and cook in a hot, buttered/oiled pan for 15 min per side until crispy.
We’ve still got a lot of potatoes at home, so I forsee a lot of these potatoes this month. Yey!
