Trout and Crispy Roasted Potatoes

This trout may have helped us reach our monthly spending budget already this month.

Yes, 2 weeks in, and we’re already at the max. Oopsie. But this trout was a very yummy treat. Albany John baked it in the oven, skin side up. Nice and rare in the center, with copious amounts of salt.


I made some potatoes – crispy skinned on the outside, and soft inside. Just cut them up, par-boil for about 7-8 minutes, and cook in a hot, buttered/oiled pan for 15 min per side until crispy.

We’ve still got a lot of potatoes at home, so I forsee a lot of these potatoes this month. Yey!


And even better – fish crackling! Once the fish meat was done cooking, Albany John peeled the skin off and stuck it in the oven to crisp up some more. Very crunchy and crispy – like a crackling!

  1. i’ve never met a potatoe i didn’t like! we had roasted potatoes on friday w/ chicken and veggie and scallop skewers. The secret was Trader Joe’s Chinese black pepper sauce. SexyBeast is addicted to it from visiting Emperor’s on Wolf Rd
