Albany John picked up some pumpkin greens at the Asian Supermarket on Central. He also picked up a neon-hued Indian spice jar and marinated some tofu in it. Greens he just stir-fried in the wok.
Pumpkin greens were a little fuzzy, but light and refreshing. No bitterness to them, but not as watery as spinach or other greens become when you cook them. I guess what I’m saying is they retained a nice bit of firmness to them.
